Beef broth (as much as you need to keep it very liquid. The starch below will thicken it)
Stew meat chuncks, grilled in evoo and garlic before you place in the pot
2 bay leaves
parsley
oregano
chopped garlic cloves (as much as you like)
1/2 onion sliced in 1/2" pieces (not minced)
1 can of diced tomatoes
3 chopped potatoes (pick any color you like or combine them)
corn (fresh or frozen)
green beans (fresh or frozen)
fresh mushrooms
1 can of kidney beans
1 cup of red wine
1 sliced carrot
1 sliced celery stalk
sliced red or green peppers (or both)
salt and pepper to taste
Done! Let it stew, let it stew, let it stew! The longer the better.

ReplyDeleteFor my vegetarian friends, you can delete the stew meat, substitute veggie broth, and add marinated artichoke hearts instead!
