Scotty's Super Bowl Salsa
This recipe will rock your Super Bowl Party! Once again, you can be as creative as you would like with the portions. Prepare this at least 24 hours before serving for flavor infusion. Enjoy!
6 Roma tomatoes, chopped (all veggies below are also chopped)

1/2 red onion
2 green onion stalks
1/2 half red pepper
1/2 half green pepper
1/2 half yellow/orange pepper
2 seeded jalapenos (finely chopped)
Radishes (finely chopped)
1/4-1/2 cup of corn (make fresh corn when in season)
Fresh cilantro
4 garlic cloves, (finely chopped)
1 lime & 1 lemon, juiced
Big splash of apple cider vinegar
A good drizzle of evoo
Hot sauce, to taste
Chili powder, salt, and pepper, to taste

JT Kite Surfing In The Big Soup!
This is my Brother Johnny Tremaine shredding the big stuff. Is there anything this guy can't do? The dude could ride a wheelie all the way from his house to 7-11 for a Slurpee! He's a great surfer, awesome windsurfer, excellent skier...and now a kite surfer?!?!? JT, Renaissance MAN! I bet you can't golf though. ;>P
Mac & Cheese on Acid
I have never met anyone who doesn't like this! And this non-recipe gives you the chance to be as creative as you want to be. You can always add leftovers to compliment this dish as well.
1 box of Mac & Cheese (the kind with the cheese included, not the powdered stuff)
Start boiling water and add some evoo and a little salt
Here is where it gets fun: Prepare whatever you want to go with it. Hamburger, Italian sausage, ham, salami, pepperoni, shrimp, whatever you like for you meat eaters. My favorite is turkey burger. If you're a vegetarian, peas, mushrooms, green beans, peppers, sliced red onions, etc. are a great alternative. Have fun, it's your choice!
Boil the noodles and follow the directions on the box depending on your altitude.
When done, add the cheese...and here is the secret: then mix in some marinara or vodka sauce and toss. Once you've made it a light pinkish color, add your side ingredient(s). Think of it as a pizza without the bread. Serve in a bowl because it will stay warm much longer. And I guarantee those bowls will come back for more!
Enjoy.

Tammy Tremaine's Tale
I had to share this! I spit on my monitor when I read it. ;)
Some lady just cut in front of me in line at the gas station. Then yelled at some old man for taking the window squeegee before her. She said she was at the gas station first. WTF???? She didn't find my reply, "Who lit the fuse on your tampon?!?" as funny as I did...but the old man did! hahahaha!
Memo to self: Do NOT mess with Tammy...especially during a certain time of the month.

Sorry to see you go Jack LaLanne...
As a young child I used to watch Jack LaLanne every morning while my mom was getting ready for work...on our black and white TV in the living room.

From the 1950s through the 1980s, LaLanne performed multiple feats of strength and endurance. His first such stunt was an underwater swim the length of the Golden Gate Bridge, loaded with 140 pounds of equipment, in 1954. He went on to stage many attention-getting events, including completing over a thousand pushups in a little over 20 minutes, and towing 65 boats filled with thousands of pounds of wood pulp in Japan.

Scotty's Hawaiian Chicken
This is always a crowd pleaser!
I don't cook anything with a "recipe" as it were, so just wing it and have some fun. It's all here, just make it as you see fit.
6 boneless & skinless chicken breasts (more or less depending on how many people you are serving)
Broil in a Pyrex dish over butter with chopped garlic cloves until slightly browned (both sides). About 2-3 minutes each side.
Remove from oven.
Cut into 1-2" pices when cool
Add 2 cans of Contadina sweet & sour sauce to the dish
Add 1/2 can of crushed pineapple...and 1/2 the juice from the can
Cut 1 cellery stalk Asian style (at a 45% angle)
Cut 1 carrot the same way
Slice aprrox. 6 mushromms
Cut a 1/2 red onion into large pieces - 1/2" plus
Slice 1/2 green pepper and 1/2 red pepper
1 small can of bamboo shoots
1 small can of waterchestnuts
Toss everything in the dish, stir, cover with foil, and bake for 45 minutes
While it is baking, make a pot of sticky white rice (must be sticky!)
When everything is done, serve in a bowl over the rice and garnish with a pineapple ring on top.
Your family or guests will be very impressed. Enjoy!

One of the Few...
I know I'm in the minority here, but I can't stand Starbucks. I don't like the taste of their coffee, as it leaves a horrible aftertaste on my pallet. However, above and beyond that, I don't agree with their business practices. When I worked in Colorado Springs a few years back, there was a Starbucks a block down the street from my office. There was also a locally-owned coffee shop on my block. As soon as a business vacancy became available straight across the street from them, Starbucks opened up another shop! 2 Starbucks in 2 small blocks? In Colorado Springs? Hello, it's not Manhattan, Seattle, Boston, San Francisco...or even Denver for that matter. The purpose of that new shop: to put the little guy out of business. I don't like bullies. So I always took my business to the little guy. And their coffee tasted great! :>)

Drunken Prawns with Vodka Penne for Allison
Ok, this one is delicious, easy and quick!
Start boiling the water for the pasta
Begin heating some vodka sauce (jar). If you want to make your own, combine marinara sauce with a little cream and vodka
Add the penne pasta to the boiling water. 10-12 minutes
Saute prawns (or shirmp) in butter, garlic and red wine (not white)...stir until the prawns are pink (3 minutes)
Drain the prawns from the saute - keep warm in the skillet
Drain the pasta when done
Throw the vodka sauce and prawns on top of the pasta in a bowl and toss...or not! You can let people go fishing!
And you're done!

As it stands: C Buster Posey, 1B Huff, 2nd Sanchez, SS Tejada, 3rd Sandoval, LF Burrell, CF Torres, RF Ross...and a great young pitching staff and solid bullpen! I believe they need another bat...possibly an outfielder. "The Machine" can't be an everyday player in left. Or a first baseman, which would move Huff to left. Is Belt in the mix for 2011? Your thoughts...

1/2 onion sliced in 1/2" pieces (not minced)
1 can of diced tomatoes
3 chopped potatoes (pick any color you like or combine them)
corn (fresh or frozen)
green beans (fresh or frozen)
fresh mushrooms
1 can of kidney beans
1 cup of red wine
1 sliced carrot
1 sliced celery stalk
sliced red or green peppers (or both)
salt and pepper to taste
Done! Let it stew, let it stew, let it stew! The longer the better.
